Beer Batter Crappie!


1 lb. Crappie Fillets, cut into finger-like strips

12 Oz. Ale or any Full-Bodied Beer

1 ½ cups Corn flour

1 tsp. Salt

1 tsp Paprika

½ teaspoon Cayenne Pepper

1 cup flour

Fresh Peanut or Canola Oil


  1. Empty Beer into a large bowl
  2. Add corn flour, salt, paprika and cayenne pepper to the bowl and whisk until you have a light, frothy batter
  3. Refrigerate for a minimum of one hour (can be chilled for up to 3 days)
  4. In a deep fryer or deep skillet, heat 2 inches of oil (deeper if needed) to a temperature of 350° F
  5. Dredge fillets in flour, shaking off excess
  6. Dip fillets into the beer batter, coating them well
  7. Fry in oil until golden brown
  8. Drain on paper towels
  9. Serve with lemon wedges, tartar sauce or hot sauce
